  • 1 small red onion
  • 1 medium zucchini
  • 2-3 cups cauliflower florets
  • 1 pint grape or cherry tomatoes
  • 1/2 tsp Italian seasoning
Pasta and Dressing
  • 8 oz fusilli pasta (gluten-free if desired)
  • 3 tbsp balsamic vinegar
  • 2 cloves garlic (minced)
  • 2-3 tbsp fresh basil (chopped)
  • to taste Vegan Parmesan cheese (for serving)

Method
 

Preparation Steps
  1. Step 1: Preheat the Oven - Preheat your oven to 425°F (220°C) to achieve beautifully roasted vegetables.
  2. Step 2: Prepare the Vegetables - Chop the red onion, zucchini, and cauliflower into bite-sized pieces. Halve the tomatoes and place all on a baking sheet.
  3. Step 3: Season and Roast - Drizzle with olive oil, sprinkle with Italian seasoning, and toss. Roast for 20-25 minutes, stirring halfway.
  4. Step 4: Cook the Pasta - Boil salted water, add fusilli, and cook until al dente. Drain and set aside.
  5. Step 5: Combine and Flavor - In a mixing bowl, combine roasted vegetables and pasta. Add minced garlic and balsamic vinegar, tossing together.
  6. Step 6: Garnish and Serve - Sprinkle with fresh basil and serve warm with Vegan Parmesan cheese on top.
