Ingredients
  

  • 1 pound skinless fresh wild-caught salmon
  • 1 peeled and small diced red onion
  • 1 seeded and small diced red bell pepper
  • 2 finely minced garlic cloves
  • 2 tablespoons chopped fresh dill
  • 4 thinly sliced fresh green onions
  • 3 whisked eggs
  • 1 sleeve saltine crackers crushed
  • 1/3 cup oil for frying
  • Salt, pepper, and Tabasco to taste

Method
 

  1. Start by finely dicing the red onion and red bell pepper. Mince the garlic cloves and chop the fresh dill. If you're using fresh salmon, cut it into smaller pieces for easier mixing.
  2. In a large mixing bowl, combine the diced salmon, red onion, red bell pepper, minced garlic, chopped dill, and sliced green onions. Mix everything thoroughly.
  3. To the salmon mixture, add the whisked eggs and crushed saltine crackers. Season with salt, pepper, and a few dashes of Tabasco to taste.
  4. Using your hands, scoop about a quarter cup of the mixture and form it into a patty. Repeat until all the mixture is shaped into patties. You should have approximately 8-10 patties, depending on your preferred size.
  5. Heat the oil in a large skillet over medium heat. Once the oil is hot, carefully place the patties in the skillet, ensuring not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and crispy.
  6. Once cooked, transfer the patties to a paper towel-lined plate to drain excess oil. Serve them warm with your favorite dipping sauce or a side salad for a refreshing meal.

Notes

  • For a spicier kick, add more Tabasco or your favorite hot sauce to the mixture.
  • These patties can be made ahead of time and stored in the refrigerator for up to 24 hours before frying.
  • Feel free to experiment with herbs; parsley or cilantro can be used if you prefer a different flavor profile.
  • If you want a gluten-free option, substitute the saltine crackers with gluten-free breadcrumbs.
