Ingredients

For the Toffee:
  • 40 pieces salted Saltine crackers
  • 1 cup unsalted butter
  • 1 cup packed light brown sugar
  • 12 ounces chocolate chips
  • ½ cup chopped pecans (optional)

Equipment

  • Baking sheet
  • Parchment paper
  • Saucepan
  • Spatula
  • Double boiler or microwave-safe bowl

Method

Instructions
  1. Step 1: Prepare the Baking Sheet - Line a rimmed baking sheet with parchment paper, ensuring it covers the bottom completely. Preheat your oven to 400°F (200°C) while you prepare the rest of the ingredients.
  2. Step 2: Arrange the Crackers - Evenly lay out the 40 salted Saltine crackers in a single layer on the prepared baking sheet. It’s okay if they touch slightly; just ensure they cover the entire surface area.
  3. Step 3: Make the Toffee Mixture - In a medium saucepan over medium heat, combine 1 cup of unsalted butter and 1 cup of packed light brown sugar. Stir continuously until the mixture comes to a boil, then let it boil for 3 minutes without stirring.
  4. Step 4: Pour the Toffee Over Crackers - Once the toffee is ready, carefully pour it over the arranged Saltine crackers. Use a spatula to spread it evenly, ensuring all crackers are coated.
  5. Step 5: Bake the Toffee - Place the baking sheet in the preheated oven and bake for 5-7 minutes. The toffee should be bubbling and slightly golden. Be careful not to overbake, as it can burn quickly.
  6. Step 6: Melt the Chocolate - While the toffee is baking, melt 12 ounces of chocolate chips in a double boiler or microwave-safe bowl. If using a microwave, heat in 30-second intervals, stirring in between until smooth.
  7. Step 7: Add the Chocolate Layer - Remove the baking sheet from the oven and immediately pour the melted chocolate over the hot toffee layer. Use the spatula to spread the chocolate evenly.
  8. Step 8: Top with Pecans - If desired, sprinkle ½ cup of chopped pecans over the melted chocolate, pressing them gently into the chocolate to ensure they stick.
  9. Step 9: Cool and Set - Allow the Saltine Toffee to cool at room temperature for about 30 minutes, then transfer it to the refrigerator to set completely, about 1-2 hours.
  10. Step 10: Cut and Serve - Once set, break the toffee into pieces and serve. Enjoy the delightful crunch and the perfect balance of salty and sweet flavors!

Notes

  • Use salted crackers to balance the sweetness of the toffee and chocolate.
  • For a smoother chocolate layer, consider using high-quality chocolate chips or bars.
  • If nuts aren’t your thing, leave them out or substitute with seeds.
