Ingredients
  

  • 1 cup half and half
  • 3 large eggs
  • 1 tablespoon sugar
  • 3 (10 oz) bags of frozen corn thawed
  • 8 ounces sharp white cheddar freshly grated
  • 2 cups crushed Ritz crackers
  • 4 tablespoons butter melted
  • 3 tablespoons chopped fresh chives

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the half and half, eggs, sugar, kosher salt, and pepper until well combined.
  3. Gently fold in the thawed corn and freshly grated sharp white cheddar cheese until evenly coated.
  4. Pour the corn mixture into a greased 9x13 inch baking dish, spreading it out evenly.
  5. In a separate bowl, combine the crushed Ritz crackers with the melted butter and chopped chives, stirring until thoroughly coated.
  6. Sprinkle the Ritz cracker mixture evenly over the corn mixture in the baking dish.
  7. Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and the corn is bubbly.
  8. Allow the scalloped corn to cool for a few minutes before serving. Garnish with additional chopped chives if desired.
