Ingredients
  

  • 1 lb cleaned scallops preferably dry or fresh
  • to taste Salt kosher is recommended
  • 3 tablespoons butter room temperature
  • 1 teaspoon sweet paprika
  • 1 whole lemon juiced and zested
  • 2 tablespoons olive oil
  • 3 whole garlic cloves fresh
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Start by patting the cleaned scallops dry with paper towels. Season both sides with salt.
  2. In a small bowl, combine the room temperature butter, sweet paprika, and the juice of half the lemon. Mix until well combined and set aside.
  3. Place a heavy skillet over medium-high heat and add the olive oil. Allow it to heat until shimmering but not smoking.
  4. Add the scallops to the skillet, ensuring they are not overcrowded. Sear for about 2-3 minutes on one side until golden brown. Flip them carefully with a spatula.
  5. Once flipped, add the whole garlic cloves to the skillet and spoon the garlic butter mixture over the scallops. Allow them to cook for another 2-3 minutes, basting with the melted butter to infuse flavor.
  6. Remove the skillet from heat and squeeze the remaining lemon half over the scallops. Sprinkle with chopped parsley for freshness.
