  • 1 teaspoon onion powder
  • salt and pepper to taste

Method
 

  1. Set your oven to 425°F (220°C). This high temperature will ensure the gnocchi crisps up nicely while the turkey cooks through and the vegetables roast to perfection.
  2. In a large mixing bowl, combine the gnocchi, crumbled sausage-style turkey, chopped kale, halved cherry tomatoes, and diced bell pepper. Drizzle with olive oil and sprinkle garlic powder, onion powder, salt, and pepper over the mix. Toss everything gently to coat evenly.
  3. Spread the mixture out in a single layer on your sheet pan, making sure the gnocchi isn’t crowded. This helps everything roast evenly and crisp up instead of steaming.
  4. Place the sheet pan in your preheated oven and roast for about 20-25 minutes. Halfway through cooking, use a spatula to stir and turn the gnocchi and veggies to ensure even browning.
  5. Once the gnocchi is golden and the turkey is cooked through, remove the pan from the oven. Sprinkle grated parmesan cheese on top if desired for an extra layer of savory goodness. Serve immediately and enjoy!
