Shrimp Chow Mein Recipe

Ingredients
  

For the Chow Mein:
  • 1 pound fresh chow mein noodles or 12 oz package of dried chow mein noodles
  • 2 teaspoons Asian sesame oil
  • 2 tablespoons cooking oil (canola or vegetable oil works well)
  • 2 stalks green onion cut into 1" lengths
  • 1/2 pound shrimp shelled and deveined
  • 2 tablespoons roasted sesame seeds
  • 3 tablespoons oyster sauce
  • 2 teaspoons soy sauce
  • 1/4 teaspoon sugar
  • 1/2 onion onion sliced
  • 1 stalk green onion chopped (for garnish)
  • 1/2 bell pepper bell pepper sliced
  • 1/2 cup carrots julienned
  • 1/2 cup snow peas
  • Handful fresh bean sprouts

Equipment

  • Wok or large skillet
  • Pot
  • Tongs or spatula
  • Measuring spoons

Method
 

Instructions:
  1. If you're using dried chow mein noodles, start by boiling a pot of water. Cook the noodles according to the package instructions until they are al dente. Drain and rinse under cold water to stop the cooking process, then set aside.
  2. In a large wok or skillet, heat 2 tablespoons of cooking oil over medium-high heat. Make sure the oil is hot enough before adding ingredients to achieve that perfect stir-fry sear.
  3. Once the oil is hot, add the sliced onions and stir-fry for about 1-2 minutes until they become translucent. Then, toss in the green onion lengths and continue to cook for another minute.
  4. Add the shelled and deveined shrimp to the wok. Stir-fry for approximately 3-4 minutes or until the shrimp turns pink and opaque. Be sure to stir frequently to prevent sticking.
  5. Next, add the sliced bell pepper, julienned carrots, and snow peas. Stir-fry for about 2-3 minutes until the vegetables are tender but still crisp.
  6. Now it’s time to add the cooked noodles to the wok. Drizzle in the sesame oil, oyster sauce, soy sauce, and sprinkle the sugar. Toss everything together using tongs or a spatula to ensure the noodles are evenly coated with the sauce.
  7. Finally, add the fresh bean sprouts and roasted sesame seeds. Stir to combine for about 1-2 minutes, allowing the bean sprouts to wilt slightly while keeping their crunch.
  8. Remove the wok from heat. Serve the Shrimp Chow Mein hot, garnished with the chopped green onion on top. Enjoy your delicious and colorful dish!

Notes

  • Feel free to swap vegetables based on seasonal availability.
  • Watch the shrimp closely to avoid overcooking.
  • Rinse dried noodles to prevent them from sticking together.
