Instructions:
- If you're using dried chow mein noodles, start by boiling a pot of water. Cook the noodles according to the package instructions until they are al dente. Drain and rinse under cold water to stop the cooking process, then set aside.
- In a large wok or skillet, heat 2 tablespoons of cooking oil over medium-high heat. Make sure the oil is hot enough before adding ingredients to achieve that perfect stir-fry sear.
- Once the oil is hot, add the sliced onions and stir-fry for about 1-2 minutes until they become translucent. Then, toss in the green onion lengths and continue to cook for another minute.
- Add the shelled and deveined shrimp to the wok. Stir-fry for approximately 3-4 minutes or until the shrimp turns pink and opaque. Be sure to stir frequently to prevent sticking.
- Next, add the sliced bell pepper, julienned carrots, and snow peas. Stir-fry for about 2-3 minutes until the vegetables are tender but still crisp.
- Now it’s time to add the cooked noodles to the wok. Drizzle in the sesame oil, oyster sauce, soy sauce, and sprinkle the sugar. Toss everything together using tongs or a spatula to ensure the noodles are evenly coated with the sauce.
- Finally, add the fresh bean sprouts and roasted sesame seeds. Stir to combine for about 1-2 minutes, allowing the bean sprouts to wilt slightly while keeping their crunch.
- Remove the wok from heat. Serve the Shrimp Chow Mein hot, garnished with the chopped green onion on top. Enjoy your delicious and colorful dish!
Notes
- Feel free to swap vegetables based on seasonal availability.
- Watch the shrimp closely to avoid overcooking.
- Rinse dried noodles to prevent them from sticking together.
