Special Sauce Preparation
- In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, dill pickle relish, garlic powder, onion powder, and paprika until smooth and well combined. Set aside in the fridge for the flavors to meld.
Burger Preparation and Cooking
- Place the ground beef in a bowl and season with salt and black pepper. Gently mix just until combined — avoid overworking the meat to keep it tender.
- Place your cast iron skillet over medium-high heat and allow it to get very hot. A properly heated pan is key to achieving that crispy, caramelized crust.
- Divide the beef into four equal portions. Place one portion in the skillet and immediately press down firmly with your spatula or scraper until it’s about 1/4 inch thick. Repeat with the remaining portions, cooking two at a time if necessary.
- Let the patties cook undisturbed for about 2-3 minutes until the edges are brown and crispy. Sprinkle shredded cheddar cheese over each patty, then carefully flip and cook for another 1-2 minutes to melt the cheese and finish cooking through.
- While the patties finish cooking, warm the tortillas in a dry skillet or microwave until soft and flexible.
- Spread a generous dollop of special sauce on each tortilla. Add a cheese-topped smash burger patty, then top with shredded lettuce, diced tomatoes, and onions. Fold and serve immediately.
