Ingredients

For the Smash Burger Tacos
  • 1 lb ground beef lean-to-medium fat ratio for juicy, flavorful patties
  • 1 tsp salt enhances the natural flavor of the beef
  • 1/2 tsp black pepper adds a subtle, aromatic heat
  • 4 small flour tortillas soft and pliable, perfect for folding around the fillings
  • 1/2 cup shredded cheddar cheese melts beautifully over the hot beef
  • 1/2 cup shredded lettuce adds crispness and freshness
  • 1/2 cup diced tomatoes juicy and bright, balancing the richness
  • 1/4 cup diced onions provides a sharp, sweet crunch
For the Special Sauce
  • 1/4 cup mayonnaise creamy base for the special sauce
  • 2 tbsp ketchup adds sweetness and tomato depth
  • 1 tbsp yellow mustard brings a tangy, sharp flavor
  • 1 tbsp dill pickle relish offers a sweet and tangy crunch
  • 1/2 tsp garlic powder adds savory warmth
  • 1/2 tsp onion powder enhances the umami notes
  • 1/4 tsp paprika gives a mild smoky flavor and color

Equipment

  • Cast iron skillet or heavy-bottomed pan
  • Spatula or sturdy metal scraper
  • Mixing bowl
  • Knife and cutting board
  • Measuring spoons and cups

Method

Special Sauce Preparation
  1. In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, dill pickle relish, garlic powder, onion powder, and paprika until smooth and well combined. Set aside in the fridge for the flavors to meld.
Burger Preparation and Cooking
  1. Place the ground beef in a bowl and season with salt and black pepper. Gently mix just until combined — avoid overworking the meat to keep it tender.
  2. Place your cast iron skillet over medium-high heat and allow it to get very hot. A properly heated pan is key to achieving that crispy, caramelized crust.
  3. Divide the beef into four equal portions. Place one portion in the skillet and immediately press down firmly with your spatula or scraper until it’s about 1/4 inch thick. Repeat with the remaining portions, cooking two at a time if necessary.
  4. Let the patties cook undisturbed for about 2-3 minutes until the edges are brown and crispy. Sprinkle shredded cheddar cheese over each patty, then carefully flip and cook for another 1-2 minutes to melt the cheese and finish cooking through.
  5. While the patties finish cooking, warm the tortillas in a dry skillet or microwave until soft and flexible.
  6. Spread a generous dollop of special sauce on each tortilla. Add a cheese-topped smash burger patty, then top with shredded lettuce, diced tomatoes, and onions. Fold and serve immediately.

Notes

  • Prepare the special sauce and dice veggies just before assembling for best freshness.
  • Store leftover patties and sauce separately in airtight containers in the fridge for up to 2 days.
  • Reheat patties in a skillet over medium heat to retain crispy edges.
