  • 1 cup red lentils
  • ½ cup cornmeal
  • 1 teaspoon olive oil
  • 1 medium yellow onion small dice
  • ½ cup marinara sauce I use Rao's
  • 3 tablespoons sriracha or to taste
  • 1 tablespoon ground cumin
  • ½ teaspoon cayenne pepper
  • 2 pieces green onions finely sliced
  • 4 stems parsley leaves finely sliced
  • Sea salt to taste
  • Ground black pepper to taste

Method
 

Instructions
  1. Start by rinsing the red lentils under cold water until the water runs clear. In a medium saucepan, combine the rinsed lentils with 2 cups of water. Bring it to a boil over medium heat, then reduce the heat to low and let it simmer for about 15 minutes or until the lentils are tender and have absorbed most of the water.
  2. While the lentils are cooking, heat the olive oil in a frying pan over medium heat. Add the diced yellow onion and sauté for about 5-7 minutes until the onions are translucent and fragrant.
  3. Once the lentils are cooked, transfer them to a food processor. Add the sautéed onions, marinara sauce, sriracha, ground cumin, cayenne pepper, green onions, and parsley leaves. Season with sea salt and ground black pepper to taste.
  4. Pulse the mixture in the food processor until smooth, scraping down the sides as needed. If the mixture is too thick, you can add a splash of water to achieve your desired consistency.
  5. Taste your Spicy Red Lentil Spread and adjust the seasoning if necessary. If you prefer more heat, feel free to add more sriracha or cayenne pepper. Blend again until fully incorporated.
  6. Transfer the spread to a serving bowl and garnish with additional green onions and parsley if desired. Serve it with fresh veggies, pita chips, or spread it on your favorite bread or wraps.

Notes

  • Store in an airtight container for up to one week.
  • Freeze for up to three months for longer storage.
  • Reheat gently on the stovetop or microwave.
