While the cauliflower is cooking, combine the sweet chili sauce, soy sauce, and honey in a small bowl. Mix well until smooth and set aside.
Once the cauliflower bites are cooked and crispy, transfer them back to the mixing bowl. Pour the prepared sticky sweet chili sauce over the bites and toss gently to coat each piece evenly.
