Ingredients
  

For the Stuffed Jalapenos:
  • 12 pieces jalapeno peppers around 3-4 inches long
  • 2 tablespoons unsalted butter
  • 1/2 cup panko breadcrumbs light and crispy
  • 8 oz. cream cheese softened
  • 1/4 cup sour cream
  • 1/4 cup sharp cheddar cheese freshly grated
  • 1/4 cup Pepper Jack cheese freshly grated
  • 2 tablespoons chives finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground cumin

Method
 

Instructions:
  1. Step 1: Preheat your oven to 375°F (190°C) for even cooking.
  2. Step 2: Slice each jalapeno in half lengthwise, remove seeds, and place on a baking sheet.
  3. Step 3: In a mixing bowl, combine cream cheese, sour cream, cheddar cheese, Pepper Jack cheese, and chives. Add seasonings and mix until creamy.
  4. Step 4: Fill each jalapeno half with the creamy filling.
  5. Step 5: Melt butter in a saucepan, add panko breadcrumbs, stir, and sprinkle over the stuffed jalapenos.
  6. Step 6: Bake for 20-25 minutes until jalapenos are tender and breadcrumbs are golden.
  7. Step 7: Cool for a few minutes before serving. Enjoy warm!

Notes

  • For a spicier kick, add diced jalapenos to the filling.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • For freezing, place unbaked jalapenos on a baking sheet, freeze, then transfer to a freezer bag.
