Ingredients
  

  • 1 tablespoon butter
  • 2 slices bread (sourdough, whole wheat, or white)
  • 2 slices provolone cheese (or any cheese that melts well)
  • 2 slices fresh tomato
  • 1/4 cup grated Parmigiano-Reggiano (use large holes of a box grater)

Method
 

  1. Gather all the ingredients and equipment. Grate the Parmigiano-Reggiano using the large holes of your box grater.
  2. Spread 1 tablespoon of butter evenly on one side of each slice of bread. This will ensure a beautiful golden-brown crust.
  3. On the unbuttered side of one slice of bread, layer one slice of provolone cheese, followed by the tomato slices, and then the second slice of provolone cheese. Top it off with the other slice of bread, buttered side facing out.
  4. In the skillet, heat on medium-low. Once warm, sprinkle half of the grated Parmigiano-Reggiano in a circle in the skillet, about the size of the sandwich. Place the assembled sandwich on top of the cheese. Then, sprinkle the remaining Parmigiano-Reggiano around the edges of the sandwich.
  5. Cook for about 3-4 minutes, or until the bottom is golden brown. Carefully flip the sandwich using the spatula, and cook for another 3-4 minutes on the other side, ensuring the cheese melts and the bread crisps up.
  6. Once both sides are golden and crispy, remove the sandwich from the skillet. Let it cool for a moment, slice it in half, and serve warm. Enjoy the delightful crunch and melty goodness of your Super Frico Grilled Cheese Sandwich!
