Ingredients
  

  • 1 cup Unsalted butter
  • 1.5 cups Brown sugar
  • 0.5 cup Light corn syrup
  • 14 oz Rice Chex cereal
  • 1 teaspoon Baking soda
  • 1 teaspoon Vanilla extract
  • 18 oz Cashews roasted and salted
  • 1 cup M&Ms

  • Medium saucepan
  • Baking sheet
  • Parchment paper
  • Rubber spatula

Method
 

  1. Step 1: Preheat the oven to 250°F (120°C) for even caramelization.
  2. Step 2: Line a large baking sheet with parchment paper.
  3. Step 3: Melt the butter in a medium saucepan over medium heat, then stir in brown sugar and corn syrup. Bring to a boil and cook for 2 minutes without stirring.
  4. Step 4: Remove from heat and stir in baking soda and vanilla; mixture will bubble.
  5. Step 5: In a large mixing bowl, combine Rice Chex and cashews. Pour the caramel over and stir until coated.
  6. Step 6: Spread the mixture on the baking sheet and bake for 1 hour, stirring every 15 minutes.
  7. Step 7: Stir in M&Ms after removing from the oven and cooling slightly.
  8. Step 8: Allow to cool completely before transferring to an airtight container.

Notes

  • Store in an airtight container at room temperature for up to two weeks.
  • For a longer shelf life, consider freezing the mix.
  • Feel free to substitute cashews with other nuts like almonds or peanuts.
