Ingredients
  

  • 1 lb salmon fillet fresh and high-quality
  • 1 tablespoon oil for cooking; light oils like canola or vegetable work well
  • White and black sesame seeds for garnishing
  • 3 tablespoons soy sauce or Tamari the base of the teriyaki marinade
  • ½ cup mirin sweet rice wine
  • 2 tablespoons sugar enhances sweetness

Method
 

  1. In a mixing bowl, combine the soy sauce (or Tamari), mirin, and sugar. Whisk until the sugar is fully dissolved.
  2. Place the salmon fillet in a shallow dish and pour the marinade over it, ensuring it is well-coated. Let it marinate for at least 15 minutes.
  3. In a skillet over medium heat, add 1 tablespoon of oil. Allow the oil to heat until it shimmers.
  4. Carefully place the marinated salmon fillet into the skillet, skin-side down. Cook for about 4-5 minutes.
  5. Drizzle some of the leftover marinade over the salmon while it cooks on the other side. Flip and cook for another 3-4 minutes until cooked through.
  6. Transfer the salmon to a serving plate. Sprinkle with white and black sesame seeds. Serve with rice and steamed vegetables.

Notes

  • Fresh, high-quality salmon results in a better flavor.
  • Don’t over-marinade the salmon to avoid excessive saltiness.
  • Let the salmon rest after cooking for a juicier texture.
