Ingredients

For the Lasagna:
  • 1.5 pounds organic ground beef
  • 1 teaspoon seasoned salt
  • 1 package taco seasoning
  • 1 can petite diced tomatoes 14.5 oz, undrained
  • 1 can tomato sauce 15 oz
  • 1 can chopped green chilies 4 oz
  • 2 cups cottage cheese 4%
  • 2 large eggs lightly beaten
  • 12 small corn tortillas torn
  • 3-4 cups shredded cheese Cheddar & Monterey Jack
For the Toppings:
  • 2-3 cups tortilla chips broken into medium/large pieces
  • Salsa of your choice
  • 3 tomatoes diced
  • 3 avocados cut into chunks

Equipment

  • Large skillet
  • Mixing bowls
  • 9x13-inch baking dish
  • Cooking spoon
  • Aluminum foil

Method

Cooking Steps:
  1. Step 1: Brown the Beef - In a large skillet over medium heat, add the organic ground beef. Sprinkle with seasoned salt and taco seasoning. Cook until the beef is browned and cooked through, breaking it up with a spoon as you go.
  2. Step 2: Add Tomatoes and Green Chilis - Once the beef is cooked, stir in the petite diced tomatoes (with juice), tomato sauce, and chopped green chilies. Let this simmer for about 5 minutes to allow the flavors to meld.
  3. Step 3: Prepare the Cheese Mixture - In a mixing bowl, combine the cottage cheese and lightly beaten eggs. Stir until well mixed. This will be one of the creamy layers in your lasagna.
  4. Step 4: Layer the Lasagna - In a 9x13 inch baking dish, start layering your ingredients. Begin with a layer of the beef mixture at the bottom, followed by a layer of torn corn tortillas. Spread a layer of the cottage cheese mixture over the tortillas, then sprinkle with shredded cheese. Repeat the layers until all ingredients are used, finishing with a layer of shredded cheese on top.
  5. Step 5: Bake - Preheat your oven to 350°F (175°C). Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes or until the cheese is melted and bubbly.
  6. Step 6: Add Toppings - Once out of the oven, let the lasagna sit for about 10 minutes. Then, sprinkle the broken tortilla chips on top, and add diced tomatoes and avocado chunks. Serve with salsa on the side for an extra kick!

Notes

  • For a spicier kick, consider adding jalapeños to the beef or using spicy salsa as a topping.
