Ingredients
  

  • 1 pan Brownies baked and cooled
  • 52 cookies Thin Mint Cookies or Keebler Grasshoppers from two boxes
  • 4 ounces low-fat cream cheese
  • 2 cups chocolate chips milk or semi-sweet
  • 1 tablespoon Crisco

Method
 

  1. Start by baking your favorite brownie recipe in a 9x13 inch pan. Allow the brownies to cool completely in the pan on a wire rack.
  2. In a large mixing bowl, combine the 52 crushed Thin Mint cookies with 4 ounces of low-fat cream cheese. Mix until well combined.
  3. Spread the Thin Mint truffle filling evenly over the cooled brownie layer, pressing it down gently.
  4. In a microwave-safe bowl, combine 2 cups of chocolate chips and 1 tablespoon of Crisco. Heat in the microwave in 30-second increments until smooth.
  5. Pour the melted chocolate mixture over the Thin Mint truffle layer, spreading it evenly with a spatula.
  6. Refrigerate the brownies for at least 2 hours or until the chocolate is set. Slice into squares and serve.

Notes

  • Store in an airtight container in the refrigerator for up to a week.
  • Freeze for up to three months; wrap tightly to prevent freezer burn.
  • For gluten-free, use gluten-free brownie mix and mint cookies.
