Turkey Chorizo Meatballs

Ingredients
  

  • 2 pounds lean ground turkey
  • 1/2 cup almond flour
  • 3 large eggs
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon smoked paprika
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon coriander
  • 1 teaspoon onion powder
  • 2 teaspoons granulated garlic
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (optional) If you like extra heat, this is a great addition!

Method
 

  1. Preheat your oven to 400°F (200°C). This ensures that your meatballs will cook evenly and develop a nice golden crust.
  2. In a large mixing bowl, add the ground turkey, almond flour, eggs, Greek yogurt, smoked paprika, chili powder, cumin, coriander, onion powder, granulated garlic, salt, black pepper, and cayenne pepper.
  3. Using your hands or a spatula, mix the ingredients until just combined. Be careful not to overmix, which can make the meatballs tough.
  4. Using a cookie scoop or your hands, form the mixture into meatballs about 1 to 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.
  5. Bake the meatballs in the preheated oven for 20-25 minutes or until they reach an internal temperature of 165°F (74°C) and are golden brown.
  6. Remove the meatballs from the oven and let them rest for a few minutes. Serve them over your favorite pasta, in a sub, or enjoy them as is!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • These meatballs freeze well; freeze until solid, then transfer to a freezer-safe bag.
  • Reheat in the oven at 350°F (175°C) for about 15-20 minutes.
