Cooking Instructions:
- Start by boiling a large pot of water. Once it’s rolling, add the whole wheat spaghetti or soba noodles. Cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water just in case you need it later.
- In a blender or food processor, combine the chopped lemon grass, freshly grated ginger, water, hoisin sauce, smooth peanut butter, and sugar. Blend until smooth and creamy. Adjust the consistency with more water if necessary, and set aside.
- In a skillet or wok, heat a splash of oil over medium heat. Add the broccoli, red pepper strips, green pepper strips, and carrot strips. Sauté for about 5-7 minutes, or until the vegetables are tender yet crisp.
- Add the cooked noodles to the skillet with the sautéed vegetables. Pour the peanut sauce over the top and toss everything together gently until well combined. If the mixture seems too thick, add a splash of the reserved pasta water to loosen it up.
