Yaniqueques (Crispy Dominican Fritters)

Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 tablespoons vegetable oil for the dough
  • 2 cups oil for frying
  • 1 teaspoon coarse sea salt for sprinkling

Method
 

  1. In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk them together until well blended. Add the vegetable oil and stir until evenly distributed.
  2. Gradually add water to the dry ingredients, mixing until a soft dough forms. Knead gently for about 2–3 minutes until smooth and elastic.
  3. On a lightly floured surface, roll out the dough to about ¼ inch thick. Cut out circles using a round cutter or glass.
  4. In a frying pan or deep fryer, heat the oil over medium-high heat until it reaches about 350°F (175°C). Test with a small piece of dough; if it sizzles, it's ready.
  5. Carefully place the dough rounds into the hot oil, frying for about 2–3 minutes on each side until golden brown. Flip halfway through cooking.
  6. Remove fritters from oil and drain on paper towels. While hot, sprinkle with coarse sea salt and serve warm.

Notes

  • For a healthier option, substitute all-purpose flour with whole wheat flour.
  • Try using coconut oil instead of vegetable oil for a tropical flavor.
  • Add spices like garlic powder or paprika for extra flavor.
  • Fritters can be stored in an airtight container in the fridge for up to 2 days.
  • You can freeze fried fritters for up to 1 month; reheat in the oven.
