Ingredients

  • 1 1/4 cup almond milk (or any milk you wish)
  • 2/3 cup Stonyfield Plain 0% Fat Yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose unbleached, white whole wheat flour or gluten-free flour mix
  • 1 tablespoon baking powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • cooking spray

Equipment

  • Waffle iron
  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • Spatula or spoon

Method

  1. Turn on your waffle iron and allow it to heat fully. Spraying it lightly with cooking spray before each batch prevents sticking and helps achieve that perfect golden crust.
  2. In a large bowl, whisk together the flour, baking powder, and kosher salt to distribute leavening agents evenly.
  3. In a separate bowl, beat the eggs. Add the yogurt, almond milk, and vanilla extract, mixing until smooth and creamy.
  4. Pour the wet mixture into the dry ingredients. Stir gently with a spatula just until combined. Avoid overmixing; a few lumps are okay.
  5. Spoon the batter onto your preheated waffle iron. Close the lid and cook according to your iron’s instructions, usually 3-5 minutes, until steam stops escaping and waffles are golden brown.
  6. Serve your Yogurt Waffles hot with favorite toppings like fresh fruit, maple syrup, nut butter, or powdered sugar. Keep warm in a low oven (200°F) on a wire rack if making multiple waffles.

Notes

  • Freeze leftover waffles in a single layer before transferring to a freezer bag for up to 2 months.
  • To reheat, toast waffles in a toaster or oven at 350°F for 5-8 minutes until crisp and heated through.
  • Use gluten-free flour and dairy-free yogurt/milk alternatives for dietary preferences.
  • Prepare batter the night before and refrigerate; add a pinch more baking powder before cooking for best rise.
  • Adjust cooking time based on your waffle iron for perfect crispness and tenderness.
